Stuffed Peppers Recipe

Here you have the complete recipe to make quinoa stuffed peppers :

Ingredients:

  • 4 large bell peppers (red, green or yellow)
  • 1 cup of quinoa
  • 2 cups of water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 large carrot, grated
  • 1 small zucchini, grated
  • 1 can of chopped tomatoes (400 g)
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • 1/2 cup of grated cheese (optional, to gratin)

Instructions:

  1. Preheat the oven to 200°C.

  2. Wash the peppers and cut them in half lengthwise. Remove the seeds and the white membranes inside. Place the peppers on a baking sheet and set aside.

  3. Rinse the quinoa under cold water to remove any bitter residue. Then, place it in a saucepan with 2 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, and cook covered for about 15-20 minutes, or until the quinoa is tender and all the liquid has been absorbed. Remove from heat and reserve.

  4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until golden and fragrant.

  5. Add the grated carrot and grated zucchini to the pan. Sauté for a few minutes, until the vegetables are tender.

  6. Add the chopped tomatoes to the pan and mix well. Season with ground cumin, sweet paprika, salt and pepper to taste. Cook over medium-low heat for about 10 minutes, so the flavors blend.

  7. Remove the pan from the heat and add the cooked quinoa to the vegetable mixture. Mix everything until well combined. Adjust the seasoning if necessary.

  8. Fill each bell pepper half with the quinoa-vegetable mixture. Place the stuffed peppers on the baking sheet.

  9. If desired, sprinkle grated cheese over the stuffed peppers.

  10. Bake the peppers for about 25-30 minutes, or until they are tender and lightly browned on top.

  11. Once the peppers are done, remove them from the oven and let them cool for a few minutes before serving.
